Ingredients

  • 1 ½poundsground elk meat
  • 2largeyellow onions, diced
  • 2(10 ounce) canstomato sauce
  • 1(15 ounce) cankidney beans, drained
  • 1(14.5 ounce) canItalian-style stewed tomatoes
  • 1(4 ounce) candiced green chiles (Optional)
  • ½cupbrown sugar
  • 1 ½tablespoonschili powder
  • 1 ½teaspoonsground cumin
  • 1teaspoondried oregano
  • 1teaspoonsalt
  • 1teaspoonground black pepper

  • Directions

    Cook ground elk and onion in a large, deep skillet over medium heat until brown. Drain excess grease.

    Stir tomato sauce, kidney beans, stewed tomatoes, and green chilies into elk mixture to combine; season with sugar, chili powder, cumin, oregano, salt, and black pepper. Cover the skillet; simmer over low heat at least 1 hour.
