Ingredients

  • 7cupswater
  • 1poundcooked, smoked lean ham, cut into chunks
  • 1(14.5 ounce) canlow-sodium diced tomatoes, undrained
  • 1 ¾cupsdried lentils, rinsed
  • 8ounceschopped onion
  • 6ouncessliced carrots
  • 6ounceschopped celery
  • 5clovesgarlic, minced
  • ½teaspoonground black pepper
  • ½teaspoonsalt (Optional)
  • ½teaspoondried thyme, or more to taste
  • 1bay leaf

  • Directions

    Combine water, ham, tomatoes, lentils, onion, carrots, celery, garlic, pepper, salt, thyme, and bay leaf in a slow cooker.

    Cover and cook on Low until lentils and vegetables are as soft as you like, 6 to 8 hours. Remove bay leaf before serving.
