Ingredients

  • 3tablespoonsolive oil, divided, or as needed
  • apple chicken sausage links (such as Trader Joe’s®), cut into 1/2-inch thick pieces
  • bite-sized potatoes, unpeeled and quartered
  • 1onion, halved and sliced
  • 1/3cupchicken broth
  • cabbage
  • 1teaspoongarlic powder
  • 1/2teaspoonpaprika
  • salt and freshly ground black pepper

  • Directions

Heat 1 tablespoon oil in a large skillet over medium heat.

Add sausage to the skillet, and cook, flipping occasionally, until lightly browned on both sides, about 5 to 8 minutes. Remove sausage; set aside.

Heat remaining oil in the skillet; stir in potatoes and onions. Cook and stir until potatoes just begin to  brown lightly; add chicken broth and cover the skillet. Continue to cook, stirring occasionally, until potatoes are golden brown, 12 to 17 minutes.

Add cabbage, garlic powder, and paprika, and stir well. Cook until cabbage is soft and tender, 6 to 8 minutes more. Return sausage to the skillet, and cook until heated through, 2 to 3 minutes.

Season to taste with salt and pepper, and serve.

    Cook’s Note

For variation, try other precooked sausages. Other potatoes may be used, just be sure they’re cubed small.
