Sweet and Spicy Sweet Potato Soup

Ingredients

  • 3tablespoonsolive oil
  • 4shallots, sliced
  • 1poundtart apples, cored and cut into 1/4-inch pieces
  • 2tablespoonsgrated fresh ginger
  • 1lime, zested and juiced, divided
  • ¼teaspoonred pepper flakes, or more to taste
  • ¼teaspoonground cayenne pepper, or more to taste
  • 2quartschicken broth
  • 2(15 ounce) canssweet potatoes, drained
  • ½teaspoonsalt, or to taste
  • lime wedges for serving

  • Directions

    Heat oil in a large pot over medium heat. Add shallots; cook until soft, about 3 minutes. Stir in apples, ginger, lime zest, red pepper flakes, and cayenne pepper; cook and stir until apples are very soft, about 15 minutes.

    Add broth, potatoes, and salt; cover and bring to a boil. Reduce heat to low; simmer about 10 minutes.

    Purée soup with an immersion blender until smooth. Stir in lime juice. Serve with lime wedges.



    Cook's Note:

    Granny Smith or McIntosh apples work well. You can substitute pears if you have them on hand. Adjust salt as desired. Substitute vegetable or mushroom broth for chicken broth for a vegetarian version.
