Ingredients

  • 1tablespoonolive oil
  • 1clovegarlic, minced
  • 1mediumonion, thinly sliced
  • 1stalkcelery, sliced thin
  • 1mediumgreen bell pepper, minced
  • 2(14.5 ounce) cansdiced tomatoes
  • 1largebay leaf
  • ½teaspoonsalt
  • ⅛teaspooncayenne pepper
  • 4skinless, boneless chicken breasts

  • Directions

    Preheat the oven to 350 degrees F (175 degrees C).

    In a large skillet, heat oil over medium heat. Add garlic, onion, celery, and bell pepper. Cook, stirring occasionally, until tender (about 4 minutes). Add tomatoes, bay leaf, salt, and cayenne pepper. Cook the sauce 3 minutes longer, stirring often.

    Arrange chicken breasts in an 8×11-inch baking dish. Pour the Creole sauce over chicken.

    Bake 15 to 20 minutes, until chicken is tender and white throughout.
