Creamy Vegetable Pasta Salad

Ingredients

  • 3cupsfusilli pasta
  • ¾cupbroccoli florets
  • ¾cupcauliflower florets
  • ½cupred onion, sliced
  • ½cupthinly sliced carrots
  • ½cupred bell pepper, chopped
  • ½cupchopped green bell pepper
  • ½cupchopped mushrooms
  • ½cupchopped celery
  • ¾cuplight mayonnaise
  • ¼cupdistilled white vinegar
  • ¼cupwhite sugar
  • salt and ground black pepper to taste

  • Directions

    Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water, stirring occasionally, until tender yet firm to the bite, 8 to 10 minutes; drain. Rinse pasta under cold water; drain.

    Combine cooked pasta, broccoli, cauliflower, onion, carrots, bell peppers, mushrooms, and celery in a large bowl; toss.

    Whisk mayonnaise, vinegar, and sugar together in a medium bowl until smooth; pour over pasta-vegetable mixture and mix well. Season with salt and black pepper.



    Cook’s Note

    When serving this salad to seniors, I usually parboil the vegetables in the microwave for 3 to 4 minutes until tender.
