Leftover Ham Bone Soup

Ingredients

  • 6cupswater, or as needed
  • 3cubesbeef bouillon
  • 1teaspoonsalt
  • 1(10 ounce)meaty ham bone
  • 3mediumpotatoes, peeled and cubed, or more to taste
  • 2smallonions, roughly chopped
  • 1(15 ounce) cankidney beans, rinsed and drained
  • 1teaspoonground turmeric
  • ½teaspoonground cloves

  • Directions

    Fill a large soup pot with enough water to cover the ham bone, but don't add the bone yet. Bring to a boil.

    When boiling, add bouillon cubes and salt. Crush bouillon with a spoon until dissolved, then add ham bone, potatoes, onions, kidney beans, turmeric, and cloves. Stir to blend spices and return to a boil.

    Lower to medium-low heat and simmer until ham is hot and potatoes are easily pierced by a fork, about 1 hour.

    Remove ham bone. Shred meat and discard bone. Return meat to the soup, and serve.



    Cook's Note:

    I usually chop the potatoes and onions while I wait for the water to boil. And once everything is in the pot you can do other stuff, like put up laundry, or quickly whip up some biscuits to go with the soup!
