Ingredients

  • 3cupsfirmly packed brown sugar
  • 2cupssugar-based curing mixture (such as Morton Tender Quick)
  • 6tablespoonscoarse ground black pepper
  • 6tablespoonscrushed red pepper flakes
  • ¼cupgarlic powder
  • 2tablespoonsmonosodium glutamate (MSG)
  • 2teaspoonsground mace
  • 2teaspoonsmustard powder
  • 40poundsground venison
  • 16fluid ouncesliquid smoke
  • 1 ½-inchbeef rounds casings as needed

  • Directions

    Combine brown sugar, curing mixture, black pepper, red pepper flakes, garlic powder, MSG, mace, and mustard; sprinkle over venison in a large mixing tub. Mix spices into venison, then add liquid smoke; mix by hand until well combined, 3 to 5 minutes. Place into a non-reactive glass or plastic container, cover, and refrigerate for 24 hours. Prepare casings according to instructions below (Cook's Note).

    To stuff, cut off a 2-foot (60-centimeter) piece of casing, pinch out water, and tie a knot at one end of casing using twine. Fill casing with venison mixture to within 4 inches of open end using a sausage stuffer or large funnel. Tie open end near sausage mixture, so mixture is firm. Tie two sausage ends together to form a circle. Repeat with remaining casings, venison mixture, and twine. Place bologna in a large roasting pan.

    Preheat the oven to 225 degrees F (110 degrees C).

    Bake in the preheated oven until bologna reaches an internal temperature of 180 degrees F (82 degrees C), about 2 hours. Cool, then refrigerate until cold.

    To serve, cut through casing lengthwise; peel off and discard casing. Slice bologna into thin slices. Bologna may be kept tightly wrapped in the freezer; defrost in the refrigerator before serving.



    Cook's Note (On Preparing Casings):

    Casings are purchased packed either in a salty brine or in moist salt. They must be rinsed inside and out and soaked overnight before using.

    To rinse the outside, place casings in a colander under warm running water (90 degrees F/32 degrees C) and rinse until all traces of salt are gone, 2 to 3 minutes. The casings may also be rinsed in a large bowl of warm water (90 degrees F/32 degrees C); drain and replace water until all salt is gone, 4 to 5 times.

    To rinse the inside, place casings in a colander in the sink. Find one end of 1 casing, hold it open under warm running water (90 degrees F/32 degrees C) and fill with 8 to 10 inches of water. Gently lift casing out of colander, allowing water to run all the way through, and empty out the end. Repeat twice more with same casing; set aside. Repeat with remaining casings.

    After casings have been rinsed, place into a bowl filled with warm water (90 degrees F/32 degrees C); soak in the refrigerator 2 hours to overnight. Drain off cold water; replace with fresh warm water (90 degrees F/32 degrees C). Set aside at room temperature before stuffing for 2 hours.
