Thai Pork with Peanut Sauce

Ingredients
¼cupall-purpose flour
1teaspoonground cumin
¼teaspooncayenne pepper
¾teaspoonsalt, divided
2tablespoonsvegetable oil
4boneless pork chops, about 3/4-inch thick
⅓cupchicken broth
½cupcoconut milk
2tablespoonspeanut butter
1tablespoonhoney
1teaspoonground ginger
¼cupchopped green onion
¼cupsliced red bell pepper
¼cupcoarsely chopped dry roasted peanuts
¼cupchopped fresh cilantro
Directions
On a plate, combine flour, cumin, cayenne pepper, and 1/2 teaspoon of salt. Stir to distribute the spices. Coat pork chops with flour mixture, and shake off any excess.
Heat oil in a large skillet over medium-high heat. Place pork chops in the hot skillet, and fry for about 4 minutes per side, until cooked through.
While the pork chops cook, stir together chicken broth, coconut milk, peanut butter, honey, ginger, and 1/4 teaspoon of salt.
Remove pork chops to a serving platter, and keep warm.
