Cassava Couscous (Attieke)

Ingredients

  • 1tablespoonvegetable oil
  • ¼cupminced yellow onion
  • ¼cupminced carrot
  • ¼cupminced celery
  • ¼cupchopped peanuts
  • 2tablespoonsblack sesame seeds
  • 1bay leaf
  • salt to taste
  • 1 (300 g) box attieke (cassava couscous)
  • 1cupwater
  • 2tablespoonschopped fresh cilantro

  • Directions

    Heat oil in a large skillet over medium-high heat. Add onion, carrot, and celery; cook until fragrant, 3 to 4 minutes. Stir in peanuts, sesame seeds, bay leaf, and salt, stirring often until vegetables are tender and seeds and peanuts have toasted; add attieke, stirring constantly. Pour water over entire skillet, distributing evenly.

    Cover skillet; reduce heat to medium. Steam attieke until it is moist and heated all the way through, about 5 minutes.

    Uncover skillet; fold attieke with a spatula. Top with cilantro.



    Cook's Notes:

    Be sure to use a folding maneuver to mix attieke from the bottom upwards and let attieke breathe to help water evaporate. Do not stir attieke, as this will mash attieke.

    Boxed attieke can be found in African grocery stores or online.

    Fresh or frozen attieke can also be used in this recipe, but cooking time should be reduced by 10 minutes.
