Recipe Tip
The ideal temperature of the milk when using fresh yeast is 95 degrees F (35 degrees C) and when using dry yeast is 110 degrees F (43 degrees C).
Sift flour and salt into a large bowl. Stir in yeast mixture and egg until smooth. Fold in currants, raisins, and apple.

Cook’s Note
It's important that the oil stays at the right temperature when frying. If it drops too low, the doughnuts absorb oil; if too hot, they brown before cooking through.
We have determined the nutritional value of oil for frying based on a retention value of 10% after cooking. The exact amount may vary depending on cook time and temperature, ingredient density, and the specific type of oil used.
