Ingredients

  • 6largepotatoes, cubed
  • 2red bell peppers, seeded and diced
  • 1 ½serrano chiles, finely chopped
  • salt to taste
  • ground black pepper to taste
  • 1dashpaprika
  • 2tablespoonsvegetable oil
  • 8cupswater

  • Directions

    In a saucepan, fry potatoes in oil until golden brown.

    Stir in peppers, water, and seasonings. Cover, and simmer until potatoes are tender.
