Crockpot Cajun White Chicken Chili

Ingredients

  • 1mediumyellow onion, diced
  • 1mediumgreen bell pepper, diced
  • 2stalkscelery, finely diced
  • 1smalljalapeno, finely diced (optional)
  • 6clovesgarlic, minced
  • 1 1/2tablespoonsCajun seasoning
  • 1teaspoondried thyme
  • 1/2teaspoonsmoked paprika
  • 1/2teaspooncayenne pepper, or to taste
  • 1/2teaspoonwhite pepper
  • 2cupschicken bone broth
  • coconut milk
  • 1(14 ounce)can cannellini beans, rinsed and drained
  • 1 1/2poundsboneless skinless, boneless chicken breasts
  • salt, to taste

  • Directions

    Combine diced onion, bell pepper, celery, and garlic in a crockpot.

    Sprinkle Cajun seasoning, thyme, smoked paprika, cayenne, white pepper over vegetable mixture. Pour in bone broth, coconut milk, and cannellini beans.

    Place chicken breasts on top.

    Cover the crockpot with a lid and cook on High for 4 1/2 hours. Remove chicken and shred. Return shredded chicken to the crockpot; stir together. Adjust seasoning to taste.

    Cook’s Note

    For a thicker chili: mash 1/2 cup of the beans and stir back in.

    Some Cajun seasoning has a lot of salt, so go sparingly and taste before adding more salt.
