Directions
Combine diced onion, bell pepper, celery, and garlic in a crockpot.
Sprinkle Cajun seasoning, thyme, smoked paprika, cayenne, white pepper over vegetable mixture. Pour in bone broth, coconut milk, and cannellini beans.
Place chicken breasts on top.
Cover the crockpot with a lid and cook on High for 4 1/2 hours. Remove chicken and shred. Return shredded chicken to the crockpot; stir together. Adjust seasoning to taste.
Cook’s Note
For a thicker chili: mash 1/2 cup of the beans and stir back in.
Some Cajun seasoning has a lot of salt, so go sparingly and taste before adding more salt.
