Combine soy sauce, vinegar, brown sugar, garlic, ginger, sesame oil, and Sriracha in a small bowl.
Place chicken in a resealable plastic bag or a large bowl, add half the marinade, and stir until well coated. Reserve remaining marinade for later. Marinate in the refrigerator for at least 30 minutes or overnight is even better.
Heat a large skillet over medium heat with olive oil. Drain chicken and discard marinade. Add chicken to skillet, and cook until browned and cooked through, 8 to 10 minutes, turning a couple of times. An instant read thermometer inserted in the center should read 165 degrees F (74 degrees C)..
Reduce the heat to medium low, and pour reserved marinade in the skillet. Cook until reduced and slightly thickened, 1 to 2 minutes.
Transfer chicken and sauce to a serving platter. Garnish with toasted sesame seeds and/or green onions, and serve.
