Directions
Heat fat in a medium saucepan over medium-low heat, 2 to 3 minutes. Whisk in flour; continue to cook until paste turns golden, about 5 minutes.
Gradually whisk in drippings and stock. Increase heat to medium and cook, whisking vigorously, until smooth and thick, 5 to 10 minutes.
Season gravy to taste with pepper. Serve hot.
Cook’s Note
• You can season with salt, too, but if your drippings are salty, you may not need it.
• Use chicken stock instead of turkey stock, if you prefer.
• Store any leftovers in an airtight container in the refrigerator.
• Reheat gently in a saucepan until hot and smooth.
• If the gravy thickens too much, whisk in a splash of stock or water to loosen before serving.
