2tablespoonsbacon grease
3tablespoonsunsalted butter

Directions
Remove the husks and silk from the corn cobs.
Hold each ear up with the cob touching the bottom of a large bowl. Slice kernels off using a sharp knife. Scrape the cob with the back (dull) side of the knife to release the corn milk into the bowl. This step adds flavor and texture to the corn.
In a large skillet, preferably cast iron, over medium heat, melt bacon grease and butter together, getting the pan nice and hot.
Add corn, and cook, stirring occasionally, until bright yellow, plump, and tender, 7 to 12 minutes. Cooking time will depend on how fresh the corn is. If it’s just picked, it will cook quickly—start tasting for tenderness at about 7 minutes.
Season with salt, pepper, and sugar, and serve immediately.
