Preheat the oven to 350 degrees F (175 degrees C). Line a large baking sheet with parchment paper.
Melt butter in a large skillet over medium-low heat. Add pumpkin seeds; cook and stir until seeds turn slightly brown, about 10 minutes. Drain off any excess butter.
Off heat, stir in maple syrup, cinnamon, and nutmeg until seeds are thoroughly coated. Spread seeds onto the prepared baking sheet.
Bake in the preheated oven until crisp and golden brown, 30 to 45 minutes, stirring every 10 minutes.
Cook’s Note
You can use brown sugar and other spices instead of maple syrup, cinnamon, and nutmeg if preferred.
For a savory version, try a combination of brewer's yeast and salt.
