Ingredients

  • cottage cheese, such as good CULTURE®
  • high protein 2% milk, such as Fair Life®
  • 1/4cupbutter
  • 1largeegg
  • 1cupself-rising flour
  • 1cupoat flour
  • 1/2cupsugar
  • 1pinchsalt
  • 2/3cupsemisweet chocolate chips

  • Directions

    Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.

    Combine cottage cheese, milk, butter, and egg in a high speed blender (such as Vitamix); blend until smooth. Add in flour, oat flour, sugar, and salt. Blend in 20 seconds increments until ingredients are just combined. Fold in chocolate chips by hand.

    Cook’s Note

    Do not overblend. Excessive mixing develops gluten in the flour which can yield dense, tough muffins.

    Spoon batter into the prepared muffin cups.

    Bake in the preheated oven until tops spring back when lightly pressed and a toothpick inserted into the center of a muffin comes out clean, 22 to 24 minutes. Cool in the tin for 5 minutes.

     Transfer to a wire rack to cool completely.

    Cook’s Note

    Oat flour

    • The Vitamix is strong enough that you can make your own oat flour simply by grinding up oats.

    Substitution

    • To get a peanut butter flavor, swap out 1/4 cup self rising flour with 1/4 cup peanut butter powder
