Ingredients

  • ½cupwater
  • 1poundfresh broccoli, chopped
  • 2green onions, chopped
  • 4ouncescream cheese
  • 1tablespoonbutter
  • ¼teaspoonsalt
  • ¼teaspoonground black pepper
  • ½cupshredded Cheddar cheese
  • 2tablespoonsreal bacon bits

  • Directions

    Turn on a multi-functional pressure cooker (such as Instant Pot®). Add water, broccoli, green onions, cream cheese, butter, salt, and pepper. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 1 minute. Allow 10 minutes for pressure to build.

    Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.

    Using a potato masher, mash mixture to desired consistency. Add Cheddar cheese and bacon. Stir until cheese is melted.



    Cook's Note:

    This also works great without the Cheddar cheese and bacon, for those who are watching their calorie intake. You'll just need to finish it off with more salt. Due to the moisture content and texture, I do not recommend using frozen broccoli for this recipe.
