Combine orange juice, soy sauce, honey, hot sauce, brown sugar, ginger, and garlic in a small bowl; set sauce aside. Lightly season flour with Italian seasoning, salt, and black pepper on a large plate; set aside.
Cut chicken breasts into ½-inch strips. Dredge strips in seasoned flour; season with salt and black pepper.
Heat olive oil in a large skillet over medium heat. Add chicken strips; brown on both sides, 1 to 2 minutes per side. Add orange sauce. Reduce heat; simmer, uncovered, until sauce thickens and chicken is no longer pink in centers, 8 to 10 minutes. An instant-read thermometer inserted into centers should read at least 165 degrees F (74 degrees C).
Top orange chicken with nectarine slices.

Feel free to substitute 2 tablespoons ground ginger instead of fresh ginger.
