Tuna-Stuffed Pita Pockets

Ingredients

  • 2teaspoonsfresh lime juice

  • 1teaspoonDijon mustard

  • 1/2teaspoonwhite sugar

  • 2tablespoonsolive oil

  • solid white Albacore tuna in water, drained and chunked
  • 1 1/2tablespoons choppedred onion

  • 1tablespoonpeeled and seeded chopped cucumber

  • 1tablespoonchopped fresh parsley

  • 1tablespoondrained capers (Optional)

  • salt and ground black pepper to taste

  • 2lettuce leaves

  • 6cherry tomatoes, halved

  • 2tablespoonssliced Kalamata olives

  • 2tablespoonscrumbled feta cheese


  • Directions

    Stir lime juice, mustard, and sugar together in a medium bowl. Gradually whisk in oil until dressing thickens slightly.

    Place tuna in a separate medium bowl; add onion, cucumber, parsley, and capers. Drizzle dressing over tuna mixture; fold together to keep tuna chunky. Season with salt and pepper.

    Halve pita; open to form 2 pockets. Place lettuce inside each half; divide tuna, tomatoes, olives, and feta evenly between pockets.
