Ingredients

  • 2cupsrolled oats
  • 1cuppeanut butter
  • ⅔cuphoney
  • ½cupdark chocolate chips
  • ½cupground flax seeds
  • ½cupchocolate-flavored protein powder
  • ½cupunsweetened shredded coconut
  • 2tablespoonschia seeds
  • 1teaspooncoconut extract
  • ¼cupchopped coffee beans
  • 2tablespoonscocoa powder (such as Fry's®), or more as needed

  • Directions

    Mix oats, peanut butter, honey, dark chocolate chips, flax seeds, protein powder, coconut, chia seeds, and coconut extract together in a large bowl; fold in coffee beans. Form mixture into 1-inch balls.

    Place cocoa powder in a small bowl. Roll each ball in the cocoa powder until coated.



    Recipe Tip

    You can use vanilla protein powder instead of chocolate, and semisweet chocolate chips instead of dark chocolate.
